Our Quality Grades
Most of our products are available in each of 3 separate quality grades (as well as multiple sizes). These quality grades are based upon the percentage Wagyu genetics of the animal the product came from, as well as the level of marbling, marbling fineness and color of the product.
Platinum
Our Platinum grade product is always from a 100% fullblood Wagyu animal, meaning that it has been DNA parent-verified to its two 100% fullblood Wagyu parents. To qualify as Platinum grade product must also have at least the minimum level of marbling, marbling fineness and color required to pass our test for carrying the Platinum quality grade designation. This is our best quality grade.
Gold
Our Gold grade product is always from an animal that has at least 75% or more Wagyu genetics based upon DNA parent-verified to its two parents. To qualify as Gold grade product the product must also have at least the minimum level of marbling, marbling fineness and color required to pass our test for carrying the Gold quality grade designation.
Lean
Our Lean grade product is always from an animal that has at least 50% or more Wagyu genetics based upon DNA parent-verified to its two parents. To qualify as Lean grade product the product is required to have minimum marbling, marbling fineness and color required to pass our test for carrying the Lean quality grade designation. Our Lean product is from animals that spent the majority of their life on pasture with mostly grass and hay for feed, but they have been supplemented with grain.
